First we need to define Organic, does this mean we do not kill the mouse in any way?
If so that leaves us with catch and release methods if the mouse is already in our house.
With that in mind it will be necessary to buy special traps that can catch and retain the mouse called repeaters. Due to the fact some mice carry the hantavirus, which is very dangerous for humans, special care needs to be taken in handling the trap and releasing the mouse so you are not exposed to their feces, urine and do not run the chance of being biten.
The most popular organic control on the market is scent. I have used these and they do help. Mint oil can be put on cotton balls and placed strategically where mice might try to get into your home. However if the mouse is already in your home, they honestly will not run the mouse out.
So organic control can be done but the truth is you will find it takes a great deal of time and care. If you are willing to put that time and care into the control it will eventually work.
